I always cook live on YouTube and Facebook from 11am. Today it's potato salad with meatloaf.

Mayo or no mayo, that's the big question when it comes to potato salad. I opted for the version without mayo today. I didn't leave the potatoes in the boiling water long enough in the video, so they need a little longer than in the video. Otherwise it was delicious.

Shopping list

  • Potatoes, firm cooking
  • Onion
  • Spring onion
  • Vinegar
  • Bouillon
  • Oil
  • Oven baked meatloaf

Recipe

  • Prepare the meatloaf according to the pack instructions
  • Cook the potatoes in their skins in boiling water until al dente (knife test)
  • Peel the potatoes while still hot and cut into pieces
  • Mix 2 dl stock with 10 tbsp vinegar while still hot, add a pinch of sugar to taste
  • Fry the onions in oil until translucent and add to the potatoes with the stock, stir and leave to infuse
  • Cut the spring onions into small pieces, add to the potato salad and serve with the meat loaf and a little mustard
