Algerian fasting soup Chorba Frik
I always cook from 11am in the livestream on YouTube and Facebook. Today I'm cooking Lenten soup from Algeria.
Muslims are in the middle of Ramadan at the moment. They don't eat or drink anything while the sun is in the sky. The fast is broken after sunset. A few years ago, my friend Kamal gave me this fasting soup from his home country of Algeria to try. I was thrilled and so I tried his recipe.
Ingredients
- Meat of your choice (lamb, beef, veal, chicken)
- Large potato
- Zucchini
- 2 onions
- Carrots
- 4 peeled tomatoes (I use from the tin)
- 1 tin of chickpeas
- Glatte parsley
- Coriander
- Paprika powder
- Cinnamon
- Wheat groats frik
Recipe
- Sauté the meat with the onions until everything is translucent
- Add the drained chickpeas, cinnamon, paprika and chopped parsley and sauté
- Add the chopped vegetables and deglaze with hot water. The water should cover the meat well. Season with salt and pepper and leave to simmer
- In the meantime, wash a cup of frik well in a sieve and leave to soak in cold water.
- After half an hour, add the frik and cook until it is done. Between 15 and 30 minutes.
- Serve in a bowl garnished with parsley and coriander.
When I flew the family nest over 15 years ago, I suddenly had to cook for myself. But it wasn’t long until this necessity became a virtue. Today, rattling those pots and pans is a fundamental part of my life. I’m a true foodie and devour everything from junk food to star-awarded cuisine. Literally. I eat way too fast.
