Popsicle recipe Vol. 3: Lemonade on a stick

Ice lollies can be enjoyed in many variations. In this 5-part series, I present my favourite recipes. Today we're refreshing ourselves with a nice portion of frozen lemonade.

It's now so oppressively hot in our flat that I'm desperate for refreshment. Creamy ice cream, which I usually live for, is not always the best solution. Then it can be lemon and water ice cream for a change.

For four popsicles you need:

  • 1 cup of water
  • ¾ cups of sugar
  • the zest of one lemon
  • freshly squeezed juice of two lemons
  • a tea strainer
  • 1 lime
  • 4 ice moulds
  • Wood sticks
  • Air foil

And this is how it's done:

Step 1: Pour the water into a pan and heat it. Dissolve the sugar in it, stirring constantly.

Step 2: Now add the grated lemon zest and leave to simmer for about ten minutes.

Step 3: Now leave everything to cool. You can then add the mixture to the squeezed lemon juice and finally pour the mixture through a tea strainer to filter out the seeds and pieces of pulp.

Step 4: Place a thin slice of lime on the inside wall of the moulds and then fill them up with the prepared lemonade.

Step 5: Cut a piece of aluminium foil, fold it once and cover the opening of the moulds with it. Then use a sharp knife to cut a slit in the foil over each opening, through which you can thread the handle.

Step 6: After five hours in the freezer, the ice cream should be ready to eat. A little tip: To release the ice cream from the mould more easily, simply run it briefly under warm water.

Sad note: Unfortunately, the much-anticipated refreshment didn't materialise, because the self-made specimens melted away during the photo shoot.
