Popsicle recipe Vol. 1: Blueberry and vanilla yoghurt

Ice lollies can be enjoyed in many variations. In this 5-part series, I present my favourite recipes. Today we're focusing on the fruity blueberry and vanilla yoghurt flavour.

The sun is blazing, the heat is oppressive. There's only one thing you can do: Grab a homemade ice cream and treat yourself to a refreshing cool-down. If you like frozen yoghurt, you'll love today's recipe.

For four popsicles you need:

  • 100g fresh blueberries
  • 1dl water
  • 2 tablespoons of maple syrup
  • 100g vanilla yoghurt
  • 1dl milk
  • 1 tbsp whipped cream
  • 4 ice cream moulds
  • Wood sticks
  • Aluminium foil

And this is how it's done:

Step 1: Heat the blueberries together with the water and maple syrup over a medium heat. Leave to simmer for about 15 minutes until the water has evaporated and the consistency starts to thicken. Then leave to cool completely.

Step 2: Mix the whipped cream with the yoghurt and milk.

Step 3: To start, pour a spoonful of the cream/yoghurt/milk mixture into the tip of each ramekin. Then add a spoonful of the cooled blueberry mixture and top up with the white mixture. Incidentally, if you find that the purple and white colours don't blend together very well, you can help with a skewer until you get the desired marble result.

Step 4: Cut a piece of aluminium foil, fold it in half and cover the opening of the ice cream moulds with it. Then use a sharp knife to cut a slit in the foil over each opening, through which you can place the stick.

Step 5: After a five-hour cooling phase in the freezer, the ice cream should be ready to eat. A little tip: To make it easier to get them out of the mould, you can briefly hold the mould under warm water.
