

I scream for Ice Cream

Gelato is my favourite food. Especially creamy gelati like they make in Italy. The great thing is that you can make them relatively easily at home - in a variety of flavours and types. Here, I've created a world around ice cream where you'll find recipes, products for making it and lots of other things to inspire you.

The choice in the shops is rather limited for anyone who likes ice creams with rather exotic tastes or who doesn't like chemicals. Yet there are so many creative combinations and possibilities: creamy ice creams, frozen sorbets, fruit sticks, Italian ice creams and yoghurt ice creams, for example. There are no limits to the flavours, either: from the classic vanilla flavour to the craziest compositions such as green tea or mango and chilli. What's more, homemade ice creams can also be spiced up with fresh fruit, chocolate shavings, nuts, flowers, herbs or sweets such as cakes or chocolate bars.
Recipe for a creamy blackberry ice cream
The basic ingredients for creamy fruit ice creams are fruit pulp, sugar syrup and whipped cream. The sugar syrup delays the formation of ice crystals and gives the ice cream a creamy consistency while refining its flavour.

Fresh berries offer unique moments of pleasure. How about a creamy homemade fruit ice cream?
Ingredients:
- 1dl water
- 100g sugar
- 350g blackberries
- 1-2 tbsp lemon juice
- 2dl cream, whipped
Preparation:
Boil the water and sugar, stirring occasionally. Cook for a further 2 minutes over reduced heat and leave to cool slightly. Add the blackberries and lemon juice and blend. Sieve the mixture through a sieve into another metal container and leave to cool. Whip the cream and gently mix with the rest of the mixture.
Vacuum the mass into an ice cream maker (with refrigeration compressor) and leave the machine to run until a creamy ice cream appears. If you don't have one, you'll need to chill the mass in the freezer.
Homemade ice cream is at its best in the first week. So it's best to eat it while it's still fresh. Presented in a cone or in pretty bowls with a few fresh blackberries, it will delight all your guests.

Ice cream sticks

Homemade ice cream sticks with natural ingredients and lots of fruit aren't just good for kids. Preparation is quick and easy. All you need to do is put the mass of your choice - fruit purée or juice, smoothie, fresh summer drink, milk, yoghurt or even coconut milk - into a form and put it in the freezer. After just a few hours, the ice cream is ready to enjoy.
By putting the form under hot water for a few seconds, the ice cream will come off the form easily. If you can't get the ice creams into your guests' hands straight away, put them on a bed of ice cubes so they don't melt as quickly.
If you want to get even more out of your ice creams, put them on a bed of ice cubes.
If you want to add something extra to your ice cream stick, you can dip it in cold liquid chocolate and sprinkle it with walnut chips, chocolate shavings, etc. and put it back in the freezer for a few moments.
