
Barbecue recipe: Spareribs in a kettle barbecue

In this recipe, we show you how to prepare really tender spare ribs on your barbecue. THE CLUB" shows us how to do this in the video.
"THE CLUB" are two young Swiss people who share recipes on their website theclub.ch for easy cooking. They fired up the barbecue for us. Today they show you how to get spare ribs really tender and which marinade goes well with them.
Shopping list for two people
- 2 sprigs of rosemary, fresh
- 1 clove of garlic
- 2 pieces of spare ribs, unmarinated
- 1 tsp sugar
- 3 tbsp olive oil
- Salt
- Pepper
Cooking process
Preparation time: approx. 2.5 hours
- Mix the oil, sugar, pepper and rosemary sprigs and leave to stand
- Then marinate the spare ribs in this mixture and wrap in aluminium foil or baking paper
- Place in the oven at 120 °C for two hours
- Unwrap the spare ribs, remove the rosemary and salt the spare ribs
- Then grill to the desired crust
Cooking tip
The longer you pre-cook the spare ribs, the easier the meat comes off the bone. However, make sure that you lower the temperature for a longer pre-cooking time. To prevent your meat from becoming dry, I recommend salting the spare ribs just before grilling. If you put your spare ribs on the barbecue after baking them in the oven, you should remove the herbs from the marinade. These would burn from the heat of the grill.
