
Barbecue recipe: Cooking fish in hay

Fish on the barbecue is nothing new. But we hadn't heard of it cooked in hay. That's why "THE CLUB" has tried it out and has a delicious recipe in store for you.
"THE CLUB" are two young Swiss people who share recipes on their website theclub.ch for easy cooking. They threw themselves on the barbecue for us. In today's recipe, they show us how to prepare a fish on a hay tray and what ingredients you need for it.
Shopping list for two people
- Half a lemon
- 400 grams of fish fillet with skin (e.g. trout)
- Salt, coarse-grained
- Pepper, black
- Hay tare
Cooking process
Preparation time: 30 minutes
- Prepare the hay tray with fresh hay
- Cut the fish fillet to the right size, marinate with pepper and a little lemon juice and place skin side down on the hay tray
- Salt the fish and place on the barbecue in the hay tray
- Close the grill and cook for 20 - 30 minutes (depending on the thickness of the fish)
Cooking tip
Marinate the fish with lemon. This will tenderise the fine bones in the fish and make it easier to eat. If you're not so keen on bones, I recommend using noble fish such as trout, zander or perch. The meat of white fish (e.g. roach, rudd, alet) is delicious, but is riddled with small bones.
