The production of Hakutsuru Plum Wine uses Japanese Ume plums, which are fermented using advanced techniques and are actually more closely related to apricots. In Japan, Ume plums are typically planted in the northeastern corner of the garden, as they are believed to ward off evil coming from that direction. Their pale pink blossoms are a symbol of spring and were introduced to Japan and other East Asian countries from China.
