A Japanese sweet wine made from the "Ume" plum variety. It is well-suited as an aperitif and digestif and is often served with spicy food. In 1743, Jihei Kanoh began producing sake, and over 100 years later, the company "Hakutsuru" was officially established. Today, it is known not only for its sake but also for its plum wine. The production of Hakutsuru Plum Wine relies on Japanese Ume plums, which are fermented using advanced techniques and are actually more closely related to apricots. In Japan, Ume plums are typically planted in the northeastern corner of the garden, as they are believed to ward off evil that comes from that direction. Their pale pink blossoms are a symbol of spring and were introduced to Japan and other East Asian countries from China.
