In the vinification process, the winery utilizes a variety of technical possibilities to fully express the qualities of the grape material and the soil on which it grows. The Schaffhausen Klettgau, with its center in Hallau, comprises the largest part of the cantonal vineyard area, characterized by deep, clay-rich soils. The shallow, calcareous Oberklettgau spans 40 hectares, with the Eisenhalde Siblingen, a foothill of the Swabian Jura, recognized as the best vineyard in Schaffhausen. The remaining 500 hectares are divided among Reiat, Stein am Rhein, and Rüdlingen/Buchberg. In Schaffhausen, as in almost all of German-speaking Switzerland, Pinot Noir and Riesling Sylvaner dominate.
