1. De Cecco Spaghetti no. 12

Historically, the term "spaghetto" was first used in the Italian language in the dictionary compiled by Nicolò Tommaseo and Bernardo Bellini (1819). Here, the word spaghetto is defined as "singular, masculine, diminutive of spago," with the following note: "Minestra di Spaghetti: This refers to pasta the size of a small thread and the length of sopracapellini (a synonym for spaghetti)." Interestingly, in 1957, the BBC aired the first documentary on spaghetti production, and the following day, the phones in the TV studios rang non-stop as viewers wanted to know the names of spaghetti manufacturers and retailers to make purchases. Spaghetti is so versatile that it can be enjoyed with any sauce—from fish to meat, from vegetables to cheese. However, they also taste excellent on their own, simply with a drizzle of extra virgin olive oil and a sprinkle of Parmesan.

3. De Cecco PENNE RIGATE NO. 41

Belonging to the family of short, ridged pasta with a diagonal cut, Penne Rigate are one of the most well-known and versatile types of pasta. The term "penne" in Italian refers to the quill of a goose, which was historically used for writing and cut at an angle to create a fine point. This type of pasta, made from a smooth or ridged dough tube and varying in length, features the characteristic diagonal cut of the writing quill.

Penne is one of the few pasta varieties with a documented origin date: in 1865, a pasta manufacturer from San Martino d'Albaro, Giovanni Battista Capurro, actually applied for and received a patent for a diagonal cutting machine. This patent was particularly significant because it allowed fresh pasta to be cut into the shape of a quill without crushing the dough. The format varied between 3 and 5 cm.

In the document preserved at the Archivio Centrale dello Stato di Roma, it states: "Until now, it was only possible to achieve a diagonal cut by hand with scissors. This method was not only particularly time-consuming and labor-intensive but also resulted in irregular cuts and crushed dough."

Penne Rigate are perfect for preparing baked dishes and pasta dishes with sauces featuring pork or beef. However, they also taste excellent with vegetable sauces and, due to their versatility, with all recipes of Mediterranean cuisine, such as the classic sauce with tomatoes, basil, extra virgin olive oil, and sprinkled with Parmesan. Traditionally, they are served with Sugo all'arrabbiata.

4. De Cecco RIGATONI NO. 24

As a typical pasta variety of Roman tradition, Rigatoni are characterized by the ridges on their outer surface and their diameter. This type of pasta is particularly versatile and pairs well with various sauces made from tomatoes or vegetables, but they are best suited for meat sauces: sauces with braised meat and mushrooms, whether beef or pork, with Salsiccia, or even ragout with chicken offal. A classic recipe includes Pajata (roasted or grilled intestines from milk-fed veal). Additionally, we recommend all sauces that have enough liquid to penetrate the inside and the grooves of the pasta.

6. De Cecco Pasta Spaghetti No.12 3 kg

Historically, the official mention of the term "spaghetto" can be traced back to the first dictionary of the Italian language by Nicolò Tommaseo and Bernardo Bellini (1819). The word "spaghetto" was recorded as the masculine singular diminutive of "spago" (thread), and it refers to "minestra di spaghetti" (spaghetti soup), which is pasta the size of a long, thin thread like Sopracapellini. An interesting fact: in 1957, the BBC aired the first documentary about spaghetti production, and the following day, the television studios were flooded with calls from viewers asking for the names of spaghetti producers and distributors to buy from.

Spaghetti are so versatile that they can be served with any seasoning, from fish to meat to vegetables and cheese, but they are also excellent when simply served with extra virgin olive oil and a sprinkle of Parmesan. Available in 500 g and 3 kg packages.

7. De Cecco Casareccia No. 88

Casareccia originates from Sicily, but is also typical of other, southern parts of the country. In the shape of a small, smooth piece of parchment, rolled up in itself and curved towards the tip, the name of this type of pasta recalls its simple origin: it is an interpretation of the "pasta busiata" of Arabic origin, made with the fine cane of a plant on which the pieces of dough were rolled up. Casareccia is actually eaten with classic ragout, but the smooth and slightly porous surface also provides ideal support for any kind of sauce- from traditional to simple.

They taste excellent simply with butter and sage or paired with sauces based on tomatoes or vegetables, along with fresh herbs, and with quick, spicy sauces made with extra virgin olive oil, garlic, chili pepper, anchovies, and capers. Additionally, they are ideal for fish sauces with shellfish and seafood, as well as light sauces made with cream, mascarpone, soft and melting cheeses, and enhanced with spices like saffron, horseradish, curry, and ginger.
