Linguine are the long pasta variety par excellence. Shaped like small, flat, and narrow tagliatelle, they were created to be served with traditional pesto. Thanks to their flat cross-section and slightly convex shape, they are perfect for soaking up sauces and delivering a complete flavor experience. They taste excellent simply with butter and sage or paired with sauces based on tomatoes or vegetables, along with fresh herbs, and with quick, spicy sauces made with extra virgin olive oil, garlic, chili pepper, anchovies, and capers. Additionally, they are ideal for fish sauces with shellfish and seafood, as well as light sauces made with cream, mascarpone, soft and melting cheeses, and enhanced with spices like saffron, horseradish, curry, and ginger.
