Belonging to the family of short, ridged pasta with a diagonal cut, Penne Rigate is one of the most well-known and versatile types of pasta. The term "penne" in Italian refers to the quill of a goose, which was historically used for writing and cut at an angle to achieve a fine point. This type of pasta, made from a smooth or ridged dough tube and varying in length, features the characteristic diagonal cut of the writing quill.

Penne is one of the few pasta types with a documented origin date: In 1865, a pasta manufacturer from San Martino d'Albaro, Giovanni Battista Capurro, actually applied for and received a patent for a diagonal cutting machine. This patent was particularly significant as it allowed fresh pasta to be cut into the shape of a quill without crushing the dough. The size varied between 3 and 5 cm.

In the document preserved at the Archivio Centrale dello Stato di Roma, it states: "Until now, it was only possible to achieve a diagonal cut with scissors in hand. This method was not only particularly time-consuming and labor-intensive but also resulted in irregular cuts and crushed dough."

Penne Rigate is perfect for preparing baked dishes and pasta dishes with sauces featuring pork or beef. However, they also pair excellently with vegetable sauces and, due to their versatility, with all recipes of Mediterranean cuisine, such as the classic sauce with tomatoes, basil, extra virgin olive oil, and sprinkled with Parmesan. Traditionally, they are served with Sugo all'arrabbiata.
