Here in the canteen at Technopark, things are no less rough and tumble than in any other kitchen, says Ivan. He has been working as a chef for almost 15 years. His dream job.

Ivan's most important tool - the knife, of course. And his mouth. Nothing works without constant instructions to his 12 colleagues in the kitchen. He cuts vegetables, herbs etc. with his own knife. It is always sharp and everyone in the kitchen knows that Ivan's knife has no place in anyone else's hands.

The canteen in Zurich West produces very little waste. Most of the leftovers from the previous day can be reprocessed in a different form for the next day. Proper waste separation and recycling of the whole product must also be improved in private households. Ivan emphasises that vegetable waste is not necessary. He also cooks the cut ends at home and turns them into a delicious vegetable soup.
