Dessert queen Miss Marshall shows us how it's done: chocolate mousse (part 3)

We visited the dessert artist Miss Marshall for a third and final time. This time she showed us how to prepare a delicious chocolate mousse in a simple way.

In the video above, Miss Marshall shows you how to prepare this sweet temptation. Have fun trying it out for yourself!

Ingredients

  • 650g dark chocolate (65% cocoa content)
  • 800g whole cream
  • 240g egg yolk
  • 100g whole egg
  • 180g granulated sugar
  • 120g water

Preparation

  1. Place the egg yolk, whole egg, granulated sugar and water in a bowl and heat over a medium heat, stirring constantly.
  2. Remove the mixture from the heat and beat with a food processor until it is lukewarm.
  3. Place the chocolate in a bowl and melt over a bain-marie.
  4. Whip the cream using a food processor.
  5. Fold the whipped cream into the melted chocolate.
  6. Mix in the egg yolk mixture.
  7. Pour the mousse into the desired mould and chill for approx. four hours.
