

Baked Hokkaido pumpkin and apples

A delicious and ingenious autumn recipe: quick to prepare, inexpensive and almost excessively healthy. Even a beginner can make it.

Ingredients
- 1 whole Hokkaido pumpkin
- Four to five tart apples
- 150 g pine nuts (one pack)
- Olive oil
- Salt
Instructions
The Hokkaido pumpkin does not need to be peeled, it has a pleasant consistency and tastes good. An alternative name is orange squash. As for apples, the Boskop or Gravensteiner varieties are suitable. And when it comes to olive oil, it's worth using a high-quality one. You can vary the salt; I personally have never noticed a difference between normal salt and fleur de sel. But it does make a difference if you sprinkle a high-quality salt over the ingredients ;-)
Preparation
- Set the oven to 180° fan
- Cut the pumpkin into quarters with a good paring knife and remove the seeds
- Cut the quarters in half again in the centre and then cut into finger-thick pieces
- Toss into a large baking dish
- Cut the apples into quarters, core them and then cut into eighths
- Toss into the gratin dish as well7. Pour olive oil over everything and then spread evenly over the pieces by hand
- Sprinkle the pine nuts on top
- And then sprinkle with salt
- Place the tin in the oven for 30 minutes
Unfortunately, I didn't take another photo after baking, the dish was gone too quickly. The cooks were quick.
