How it works
Pour boiling water over the glass noodles in a bowl. Leave to stand for 5 minutes. Mix the lime juice, sugar and fish sauce. Press in the garlic. Deseed and chop the chilli. Halve the tomatoes. Slice the spring onions into rings, including the green. Pour the glass noodles into a sieve and drain. Mix all the ingredients up to and including the prawns with the glass noodles. Sprinkle with coriander and serve. Roughly chop the nuts and sprinkle on top.
