The finish is long and velvety, with slightly salty notes.

4. Champagne Bollinger Champagne Grande Annee Brut AOC millesime

Tasting note
For a vintage wine in Champagne, there must be a special year in terms of quality. Moreover, the grapes must be perfectly ripe and it must be justified
that the composition of an assemblage consists only of wines of that year. These years are rare, but they give rise to wines in which all the characteristics of the terroir are found and which make up the prestige of Champagne - and this applies to all wines. Bollinger remains faithful to the Champagne tradition and produces in these special years only one assemblage of the vintage in question: La Grande Année. The aromatic persistence and the wide range of aromas on the nose are testimony to the great class: ripe fruit aromas, but also fresh fruity notes such as rhubarb and stone fruits, paired with subtle impressions of toasted, grilled in combination with exotic spices and ginger. The fine perlage is interwoven and integrated. The fruity structure and consistency are the sensory comprehensible vintage characteristics of this growth, which convinces in the long-lasting finish by the clear expression, the classic structure.

Vinification
The first fermentation of the Grande Année takes place in oak barrels, which is a rarity in Champagne today

Culinary recommendation
Shellfish, poultry, veal, hard cheeses (e.g. Emmental, Sbrinz).

5. Champagne Bollinger Champagne Grande Annee Brut AOC millesime Rose

Tasting Notes
La Grande Année Rosé reflects the terroir, embodies tradition, and promises high enjoyment. On the nose, it reveals what can be expected from a Prestige
cuvée: character, depth, and harmony. The sensory impressions in the bouquet are complex and nuanced. The aroma palette ranges from berries (wild berries, red currant) to fresh fruits (green apple, peach, quince) to subtle notes of brioche, yeast, butter, and honey. The progression showcases a magnificent cuvée: elegant, refined, yet sustainable and persistent. The optimum balance between delicate fruitiness and structural sustainability is achieved on the palate and in the finish. For a vintage wine in Champagne, a particularly good year must be present in terms of quality. Additionally, the grapes must be fully ripe, and it must be justified that the composition of the blend consists solely of wines from that particular year. La Grande Année Rosé is based on the blend of La Grande Année, to which 7 to 8% of red wine from the single vineyard Côte aux Enfants is added, giving the wine its rich, round, and fruity characteristics. It is also the result of the unmistakable Bollinger style.

Vinification
The first fermentation takes place in oak barrels, which is a rarity in Champagne today.
