In the Belgian town of Affligem, six knights of the Holy Roman Empire, who converted to monks, began brewing beer as early as 1074. Affligem is thus the oldest of the 22 abbey beers that exist worldwide. Brother Tobias was the brewer of the abbey during World War II and made the difficult decision to pass on the brewing secrets of his order to an independent brewery to ensure their preservation. In his Formula Antique Renovata, he recorded the traditions that are still used today to brew Affligem.

The unique flavor of Affligem comes from bottle fermentation. After bottling, a carefully calculated pinch of sugar and yeast is added. In the warm cellars, where the bottles rest for 14 days, the yeast ferments the sugar into alcohol, transforming the beer into an intense, sparkling nectar. The well-flocculating yeast settles to the bottom, resulting in a particularly bright and clear beer. However, those who prefer to drink the beer with the yeast in suspension need only to gently swirl the bottle once.

The pouring ritual of the Belgian monks is charming. The last sip is not poured into the glass but is first swirled in the bottle and then poured into a small glass. This creates a "yeast deposit," allowing for a better tasting experience of the "soul of the beer.".
