Is the pressure regulator the standard Swiss style (28mBar?) and would, as such, suit the standard gas tanks that one can buy from a petrol station? I see on the Ooni website that they list both CH and DE as being the 50mBar option, which is (afaik) not compatible with standard Swiss gas tanks.

The oven comes with 50mbar regulator and that should work with most “grill” gas bottles.
One thing worth to mention: if you use the 50 mbar instead of the 30 mbar gas pressure regulator on grills that state that you should use 30mbar, there is a risk of fire. If you replace the regulator with 30mbar then the performance of the grill deteriorates. Bottom line: 30 or 50 has nothing to do with the bottle, but with the grill, and ooni uses 50 so you should be fine because the regulator already comes with the grill.
