Since I often have to get up long before my better half, I wanted to ask whether the coffee grinder starts at the moment the timer is set and thus wakes everyone up, or whether this can be set up.

You can also use the coffee machine without grinding, with or without a timer. You then simply have to add the powder (i.e. ground beans) yourself. 
The machine cannot grind today and brew coffee tomorrow. 
When I bought this machine, I wasn't aware of how loud the grinder is. I find that annoying. Otherwise, I am satisfied with the machine.
