The Nesmuk Janus Slicer features a 16 cm long blade made of niobium high-performance steel with a diamond-like carbon coating, designed for precise filleting and cutting tasks. This special steel alloy contains niobium and offers exceptional strength, corrosion resistance, and edge retention while maintaining a consistently fine steel structure. The matte black DLC coating is only a few micrometers thick but provides remarkable hardness, acid resistance, temperature tolerance, and scratch resistance with low friction coefficients for smooth cutting performance. The blade achieves a hardness of about 60 HRC with a flat grind profile and a narrow, slightly flexible construction, ideal for filleting, trimming, and creating ultra-thin slices. The handle is made from solid, seamless olive wood from Southern Europe, featuring marked grain patterns ranging from light brown to golden yellow with dark stripes. The wood retains its naturally soft tactile quality without polish for comfortable handling. A matte brushed stainless steel pin elegantly connects the blade and handle.
