Friodur Blade
The solid blade is characterized by high edge retention, which is achieved thanks to the double ice-hardened FC61 steel. This allows for an extremely fine katana-edge sharpening, reminiscent of the blades of Japanese swords. As a result, the blade is very sharp and retains its edge well – a hallmark of masterful knife craftsmanship.
Octagonal Handle
The octagon-shaped handle, measuring 11.4 cm, along with the bolster, makes the MIYABI 4000FC a versatile tool suitable for both right and left-handed users in the kitchen. You will notice that the knife always sits comfortably in your hand. The unique shape also provides a better sense of balance while cutting. A mosaic pin adds a noble accent to the impregnated, shape-stable Pakkawood handle. The engraved MIYABI logo further emphasizes the extraordinary character of this Japanese chef's knife.
