Is there a reason why the RPi 2 is more expensive than the RPi 3 here? sounds like a really bad deal to me....

This product is (only) still available through an external supplier. The Pi 3 was purchased by Digitec itself and is in stock. This means that the product can be offered at a lower price.

Does anyone have any ideas; I am looking for a way to use the Raspberry and a 7" monitor to display all the data for my products? Do you have a program or any other idea?

Build a web-based solution. This way you can store the data in a database and access it via a browser.

According to digitec specifications, the Ethernet speed is only 100Mbit/s even with this Pi. Does anyone know if this (with the Broadcom BCM2836 processor) is fast enough for 4K UHD series?

I have a Thunderbolt display, my question: is it possible to connect the Raspberry PI 2 to the Thunderbolt display with an HDMI to Thunderbolt adapter?

No, unfortunately you can't. Thunderbolt only works in the other direction (PC with TB and monitor with HDMI).
