
This soup will make you feel better when you're flat on your back
The fact that garlic is healthy is nothing new. It has lots of vitamins, helps to lower cholesterol levels and is said to help with illnesses such as the flu. That's why this soup works so wonderfully and is also delicious.
I have to admit, using two whole garlic bulbs in a soup put me off at first. At least there won't be any vampires visiting during the night. However, the long cooking time and the fresh herbs make the soup quite easy to digest. Over the years, I've discovered that I don't like too much raw garlic at all, but I do like cooked garlic all the more.

Simple and delicious
So if you're feeling ill, this garlic soup is just the thing. It warms you up from the inside, is very simple to make and tastes really good. You can let your creativity run wild with the herbs and garnish. I opted for parsley, thyme and basil as herbs and instant ramen noodles as a garnish. You can also whisk an egg into the soup, add some pancakes or enjoy the soup without the garnish.
Recipe
Ingredients
- 2 tablespoons of olive oil
- 2 whole garlic bulbs
- 2 litres of water
- Herbs (for example sage, thyme, parsley)
- Salt and pepper

- Slice one bulb of garlic in half and set it aside. Peel the cloves from the other garlic and lightly crush them. Heat the oil in a soup pan over a medium-high heat and add the garlic cloves. Swirl them occasionally until lightly browned, about 10 minutes.
- Add the water, bring to the boil and add the herbs and garlic halves. Turn the heat down again and leave the soup to simmer until half the water has evaporated, which takes about 40 minutes.
- Pour the soup through a sieve into a second pan or a large soup bowl and season with a generous pinch of salt and plenty of pepper.
