If you bake pizza at home, you know the problem: the base often remains too soft and the result looks more like an improved frozen product. This is often because the temperature has been too low. The pizza set from V-Zug is available in two versions: it consists of a solid pizza steel and a peel. This is either made of walnut or oak. Which version you choose is purely a matter of taste. Functionally, there is no difference.

The steel is designed for the dimensions of the ovens intended for it. It measures 43.1 centimetres in width and 37 centimetres in depth and weighs 2.7 kilograms. The accessory is designed for the Combair V400 to V6000 oven series. For ovens from other brands, you should make sure that the steel fits into the cooking chamber and that the oven can reach temperatures of at least around 300 degrees Celsius.

Place the steel on the standard support grids. The full-extension rack is not suitable. Because moisture impairs the heat conduction of the steel, you should avoid steam programmes.

Heat, speed, result

The pizza steel is the functional core of the set. Unlike a classic stone, steel conducts heat more directly and more quickly. According to the manufacturer, the material reaches its operating temperature in around 25 to 30 minutes and releases it evenly. This ensures a base that browns quickly and remains stable, even if you top the pizza generously.

The steel comes into its own in ovens that heat up to 300 or even 350 degrees. It maintains the temperature, even if you bake several pizzas in a row. This reduces waiting times and ensures reproducible results.

The peel makes pizza baking easier. According to the manufacturer, it is flat enough to pick up raw pizzas cleanly and sturdy enough for regular use.
