Pétillant Naturel, or Pet Nat for short, or in this case Pitt Nat, is the oldest and most natural method of sparkling wine production. The must is bottled while it is still fermenting and sealed with a crown cap to finish the fermentation. This means there is no second fermentation, as is the case with Champagne. Pitt Nat is made without any added sugar or sulfur. It represents a style beyond the mainstream. Gerhard Pittnauer was named Falstaff Winemaker of the Year in 2014.
