Good structure, full, soft, and long-lasting. Winemaking: Cold maceration of the pressed grapes, gentle pressing, fermentation in steel tanks at controlled temperatures. Short aging in the bottle. Culinary recommendation: The Pecorino has a pronounced minerality; it is a soft, compelling, and balsamic white that pairs perfectly with flavorful and intense dishes, ranging from semi-aged cheese to preparations based on shellfish and mollusks, as well as white meat and recipes with truffles or mushrooms, which complement a wine of long persistence.
