Tautona birch sugar is a table-top sweetener based on xylitol, derived from the Greek word "xylon" (wood). Around 1890, the German chemistry professor Emil Fischer discovered a previously unknown compound called xylitol from wood shavings. In 1902, Dr Fischer was awarded the Nobel Prize for Chemistry for his many achievements. At the beginning of its use and research, xylitol was obtained as a raw material from the Finnish birch tree, among others, and was therefore also called birch sugar. Properties: Consuming foods and drinks containing xylitol instead of conventional sugar can help to support tooth mineralisation. Calories/carbohydrates: Due to the lower calorific value of xylitol, the usability of carbohydrates is lower than with conventional sugar, as only 25% of xylitol carbohydrates are slowly metabolised in the body. Blood glucose increase (GI): Consuming foods and drinks containing xylitol instead of conventional sugar results in a lower post-meal blood glucose rise compared to conventional sugar.
