Harvested from 31-year-old vines growing in Glenrosa and Hutton gravel soils, the grapes are fermented with the estate's natural yeasts in open stainless steel containers. At the peak of fermentation, the skins are pushed down. Malolactic fermentation occurs in barrels, where the wine is minimally processed. Mechanical pumps are not used; only the traditional principle of gravity is applied. 35% of the wine is aged for 24 months in new French oak barrels. During this period, the wines are racked three times. There is no filtration, and the sulfur content is kept to a minimum.
With a typical Cabernet character, this is a great, rich wine with a nose of raspberry, cigar box, chocolate, and game. It has a persistent, oaky palate with rounded, ripe fruit and tannins that lend length to the finish. The wine is crafted with the utmost care and attention to detail, resulting in exceptional quality.
It is named after the first Brazilian stamps issued in 1843. After the United Kingdom, Brazil was the second country in the world to print postage stamps valid nationwide. The unusual name derives from the decorative numeral designs within the oval frames. The arrangement of the stamps on the sheet gives the impression of being looked at by a pair of bull's eyes.
