Dark couverture, Excellence 55%, with vanilla, flowing, Piccoli

Lindt couverture is characterized by a rich array of flavors, a balanced taste, a very delicate and pleasant melt, as well as the legendary finesse of Lindt chocolates. It is ideal for creating delicious pastries, creams, ganaches, or pralines.

Traditional tempering method: The couverture is heated to 45-50 °C to melt it, and then cooled to the pre-crystallization temperature while stirring continuously (dark chocolate 27-28 °C / milk chocolate 26-27 °C / white chocolate 26-27 °C). Once enough crystals have formed and the couverture has a slightly pasty consistency, bring it to working temperature (dark chocolate 31-32 °C / milk chocolate 30-31 °C / white chocolate 30 °C). Monitor the temperature of the couverture and stir occasionally. If necessary, place the couverture back in the microwave for a few seconds and check the temperature.

Ingredients: Sugar, cocoa mass, cocoa butter, emulsifier (soy lecithin), vanilla. May contain milk, hazelnuts, almonds, and other nuts. Cocoa: 55% min., cocoa butter: 36%.
