Tasting Note
Charming red. A fine, delicate, and subtle wine that is also remarkably lively. Well-integrated tannins. Aromas of cherry and sour cherries dominate.
Vinification
Pinot Noir is one of the earliest grapes, which is why it is harvested at the end of August or the beginning of September. To achieve a subtle and delicate wine, cold maceration takes place for 5-6 days, followed by alcoholic fermentation at a controlled temperature for 15 days. The wine is then aged in barrels for 6-8 months.
Culinary Recommendation
Pairs well with veal or fish dishes with sauce.
