Ritual of serving absinthe Pour 2cl of absinthe in a glass. Place the spoon on the glass. Put a white sugar cube on the spoon. Slowly trickle fresh water over the sugar. Dissolve all or some of the sugar according to your taste. Mix the components with the spoon while adding water and ice as desired.
