The individual grape varieties are hand-picked and sorted, crushed, and destemmed before being transferred to tanks. After an eight-day cold maceration, fermentation is initiated. As few additives as possible are used to preserve the true varietal characteristics of the grapes and to minimize the impact on the wine. After careful trial blends and numerous tastings, the final cuvée combines a selection of musts, each contributing in its own way to create a balanced, expressive, and fruity wine. The aging process takes place over 18 months in third-fill French oak barrels. There is a beautiful interplay of the characteristic traits of the various cultivated varieties, including plum juice, ripe cherries, mulberry, cigar box, five spices, and graphite. This approachable wine has pleasant maturity, soft and silky tannins with good balance, and a long finish. Notable flavors include cassis, fresh raspberries, tobacco, herbal notes, and pencil shavings. Balanced acidity and vibrant aromas complete this elegant wine.
