The grapes are hand-picked, and only the best fruits are selected before a ten-day cold maceration. This wine primarily consists of free-run juice and a bit of press juice. The berries are transferred to new French oak barrels, where they are slowly fermented at low temperatures using wild yeast, with 60% of the wine undergoing this process. Before bottling, the wine is aged for 18 months in a selection of French oak barrels.
