Pierre Pérignon, known as Dom Pérignon, was born in Sainte Ménehould in 1638. From 1668, he was responsible for the economic supply of the monastery of Hautvillers Abbey, a few kilometers north of Epernay. As wine production was one of the main sources of income for this monastery, he took great care in its production. He concentrated heavily on the cultivation of the vineyards on one hand and on the work in the wine cellar on the other. He was instrumental in developing the méthode champenoise with his work, but according to prevailing opinion today, he did not invent it. He found that the wine gains in quality through the use of different varieties. He was also the first to seal the bottles with a cork, which was secured to the bottle neck with cords. Today's vintners in Champagne owe him the knowledge of the importance of the assemblage.
