In the first step of sake production, the rice grains are polished. The protective skin is polished off, as the further in, the purer and more aromatic the starch in the rice grain. In this case, the degree of polishing is 45%. Almost half of the grain is polished off, resulting in a mild, aromatic and soft sake.
