Les Sentius is made entirely from grapes of very old "Carinyena" vines, which were planted in 1950 at an altitude of 630 meters above sea level. The resulting low yields (it takes grapes from 3 vines to produce 1 bottle) give the wine a concentrated fruit intensity, complexity, and a long aromatic finish. Upon pouring, the wine exudes a highly intense aroma of spicy and fruity notes such as Morello cherries, chokeberries, mocha, fine incense, raisins, leather, and dried meadow flowers. The complex bouquet of aromas and flavors continues to evolve steadily with aeration. On the palate, the wine is characterized by its elegance, finesse, and full-bodied aromatic profile. It presents itself as balsamic and sensual, with flavors reminiscent of pepper, plums, smoked bacon, Mediterranean herbs, and moist slate. We recommend decanting the wine about 1 hour before enjoying it. We would love to pair it with Catalan paella or a Spanish bean stew with chorizo.
