A portion of the Viura grapes is harvested at the beginning of ripeness, while the second part is picked when fully ripe. Both portions are fermented cold in stainless steel tanks. The ripe-harvested Malvasia undergoes alcoholic fermentation in barriques. Forty percent of this blend is aged for four months in three-year-old barriques, while the remainder stays in stainless steel. This elaborate production process is one reason for the complex notes and fullness on the palate that characterize this magnificent wine. It pairs perfectly with fish, seafood, or vegetable dishes, but it also makes a wonderful aperitif.
