Agricole Selvi was founded in 2006 and taken over by Andrea Falorni in 2012. The Falorni family has been passionately dedicated to viticulture for four generations. Using state-of-the-art technology, professionalism, and years of experience, the winery produces high-quality, accessible wines, including a Sangiovese "Governo all'uso Toscano." This so-called "Governo method" refers to an old and traditional winemaking technique from Tuscany, where the wine undergoes a second fermentation. After the harvest, a portion of the grape material is not used for immediate vinification but is dried to achieve higher extraction in the berries. This technique gives the wine a fuller body, making it round and soft. The origins of the "Governo method" date back to the Middle Ages. Today, this method is rarely used, making the Falorni-Governo a true specialty.
