Agricole Selvi was founded in 2006 and taken over by Andrea Falorni in 2012. The Falorni family has been passionately dedicated to viticulture for four generations. Using state-of-the-art technologies, professionalism, and years of experience, the winery produces high-quality, accessible wines, including a Sangiovese "Governo all’uso Toscano." This so-called "Governo method" refers to an old and traditional cellar technique from Tuscany, through which the wine undergoes a second fermentation. After the harvest, a portion of the grape material is not used for immediate vinification but is dried to achieve higher extraction in the berries. This technique enhances the wine's fullness, making it round and soft. The origins of the "Governo method" date back to the Middle Ages. Today, this method is rarely used, making the Falorni-Governo a true specialty.
