Use young leaves for roasting, fish soups, herb butter, and sauces.

Plant indoors in pots from March to May. From mid-May, place them in a sunny and warm location with a spacing of 30 x 40 cm. Keep the soil loose and cut off the flower buds. Do not harvest the flowers too late; dry the lavender bunches and hang them up. The plants cannot tolerate heavy pruning in the fall. Harvest leaves and flowers from July to September.
