With its two sides, the combination whetstone from Kai offers a grit of 300 and 1000. The finer grit allows for easy resharpening of blades by rubbing them evenly under light pressure over the wet stone. The coarser side of the Kai whetstone is recommended for removing small cosmetic defects on the blade. Before using the Kai whetstone, it should be fully submerged in water for about 10 minutes. During sharpening, a light film of water should always be present on the surface of the Kai whetstone. The Kai whetstone can be used for both single-bevel and double-bevel knives.

Everyone is familiar with the fine stropping of sharp razors over a leather blade from movies. Stropping is a refined method of honing and polishing knives to maintain ideal sharpness. At the same time, it cares for the surface of high-quality damask knives.
The stropping belt set consists of a beech wood stropping belt covered with leather and a polishing paste. Regular polishing increases durability and ensures the ideal sharpness of high-quality kitchen knives.
Polishing is typically performed after sharpening the chef's knife. During this process, the knife blade is drawn over the leather. This stropping gives the knife even more sharpness and ensures the longevity of the blade.
Application:
Before the first use, spread some polishing paste on the leather of the stropping belt and massage it in with your fingertips. Allow the cream to absorb for about 5 minutes. Since the polishing paste is very efficient, the leather does not need to be re-applied with paste before every use.
Now, draw the knife with light pressure against the cutting direction several times over the leather. This process should be repeated 10 to 12 times. Then switch the blade side. The angle when stropping is approximately the same as when sharpening with a whetstone.
