The Yaxell Super Gou 161 carving knife is excellent for slicing meat, but it is also versatile for other uses. The finely crafted Damascus design of the very sharp blade consists of 80 layers of stainless carbon steel applied to each side of the core made from SG-2 high-performance steel, resulting in a total of 161 layers with an impressive Rockwell hardness of 63 degrees. The durable handle made of red-black linen micarta with a wood-like appearance is secured with three rivets onto a core of 18/10 stainless steel. A stainless steel cap featuring the term "Gou," which translates to "excellent," completes the handle.
