The professional boning and filleting knife with a pakkawood handle has a blade length of 26.00 cm and a pure blade length of 14.50 cm. Thanks to the Damascus steel, made from 67 layers with a VG10 core, a blade hardness of 60±2 HRC is achieved. This professional kitchen knife is and remains extra sharp.

It is a well-balanced boning knife for meat and fish. With its symmetrical handle and double-sided edge, the knife is perfectly suited for both left- and right-handed users. The special ergonomics of the innovative handle, along with the excellent weight distribution, ensure fatigue-free working in the kitchen.
