Cold zone heating element: Faster heating and no burnt frying residue at the bottom of the pan. In contrast to deep fryers where the device for heating the oil is located underneath the oil pan, the heating coil of a cold zone deep fryer is located directly in the fat. This creates a cooler zone at the bottom of the oil pan. If food residues sink to the bottom, they do not burn and do not affect the flavour of the oil.
