Kai Shun

The handy all-purpose knife DM-0701 from KAI, part of the Shun series, is made from 32 layers of corrosion-resistant steel surrounding its core. The 18 cm long blade has been refined using a special process that features a Damascus pattern. Its blade impresses with a hardness of around 61 HRC, a convex grind, and manual honing. Peeling, cutting, garnishing, or shaping small works of art – all these functions can be performed with the Shun all-purpose knife. Cut your food effortlessly and without fatigue.

The KAI knife has a 10.4 cm long handle made of maple wood, sealed with resin. The Shun Classic achieves optimal grip thanks to its chestnut shape, typical of Japanese knives. This design elegantly combines the tactile feel of wood with the durability of plastic. The latter particularly enhances robustness and improved resistance to moisture. The knife's control and balance are stabilized by the full tang.
