The butcher knife ensures precise cuts with its hand-ground edge, carefully honed on both sides to 12 to 15°, and the wire-drawing technique that minimizes friction and reduces food sticking. The 2 mm thick spine easily handles cutting meat and tough vegetables, but it is not intended for breaking bones.
