GÜDE KNIVES Güde traditional manufacture in Solingen, inventor of the serrated edge for bread knives. Güde knives are forged from one piece of Solingen steel and finished and sharpened by hand, hardness 56 HRC. Handles made from old oak barrels, olive wood or POM. Special series hand forged Damascus, 300 layers of non-corrosive Damascus, hardness 61 HRC, handles made of desert ironwood (petrified wood). Güde Hard Cheese Knife The Güde Alpha Olive cheese knife X805/10 is ideal for cutting hard cheese with a firm paste such as mountain cheese or Emmental. The very compact knife fits comfortably in the hand and thus allows for convenient cutting or slicing of the cheese. The knives of the Alpha Olive series have grained handles made of olive wood. The selected woods of the handles are between 100 to 500 years old and come from southern European olive trees, which have become too old for oil production. Like all Güde knives, the very hard and only slightly shrinking wood guarantees a very universal range of use. Please note, however, that Güde knives with wooden handles do not belong in dishwashers. The water pressure and high temperatures could permanently damage the noble handle shell. Like all Güde Alpha knives, the forged blades of the Alpha Olive series are hand-sharpened and made of one piece of stainless chrome-vanadium-molybdenum knife steel. The knives are handcrafted and refined in 40 operations. So, all in all, Güde Alpha Olive knives are a perfect combination of "historical" wood and traditional forging.
