The special feature of the Güde filleting knife E765 "Alpha Fasseiche" is its flexible blade, which can bend like a spring. It cuts precise curves, a characteristic that allows for clean and accurate work, significantly facilitating the filleting of meat and fish. The hand-forged blade is made from a single piece of chromium-vanadium-molybdenum knife steel, is rust-free, ice-hardened, and hand-sharpened. The exceptional handle of this Güde knife is made from oak wood sourced from wine barrels over 80 years old, which has become nearly indestructible due to its long aging process. The rivets are made of stainless steel, while the palm rivet in the center is made of non-stainless aluminum. Güde knives with wooden handles should never be placed in the dishwasher.
